Swordfish Romesco En Papillote

Everyone has a night when you want to eat a good meal, but not spend all evening cooking it. Especially when it comes to preparing fish, cooking can get messy. Tonight I made dinner delicious, simple, and under 30 minutes.

I started with some chopped fresh vegetables. Tomatoes, celery, onions, red peppers, and garlic were my veggie tribute to a Romesco Swordfish dish.

Drizzle some olive oil over the vegetables. Then place a piece of seasoned fish on the bed of vegtables. Top that with some butter, and pinch the edges closed. This meal gives you portion control. Plus its a nive surprise when you smell the aroma opening your foil to eat it. Bake for 15 minutes at 400 degrees. Add a quick salad side, and dinner is served.

I do this meal in parchment paper usually for an authentic En Papillote. The foil seemed easier, because you just pinch it closed. So give it a try, and save some time.

Beet Rice Seared Scallops Fish And Broccoli Slaw

Beets are healthy, and tastier than they look. I wanted beets for dinner, but needed a new way to eat them. Ive had beets pureed, pickled, and roasted, but thats it. I saw a recipe for a beet and rice burger so I figured I could make beet rice.

Beet rice is a great simple way to get more beets in your diet. Saute some beets, garlic, onions, and ginger in a little oil. Add some cumin tumeric, salt, and pepper, and Jasmine rice. Boil the rice following the it’s cooking instructions. For a perfect touch once you cook the rice stir in some fresh cilantro. This was delicious. I paired it with sunflower seeds, and bacon, broccoli slaw, and seared scallops and fish. This meal was appealing in color. Filled with a rainbow of healthy vegtables, seeds, and grains. Beet rice is something I’ll definitely make again. If you want to get your kids eating beets this is a great way.

Eating healthy does not have to be a chore. Have fun trying new things, and the world will open up it’s flavor profile to you. Put your own twist on a recipe you like. Match up meals of interest together and find a new cuisine style. You will not regret creating new meals you never knew existed, and being thankful for it.

Candied Fennel Seeds

Tried something new that came out great. I wanted the taste of fennel but sweet, and not savory. First I prepared a simple syrup. Half sugar, and half water in a sauce pan. Cooking it down until ut reduced into a simple syrup. Keeping it warm on low heat so it wouldn’t harden.

I toasted some fennel seeds in a sauce pan. Just enough heat to turn them light brown and get the flavor to release. As soon as the seeds toasted, I stirred in enough simple syrup to coated the seeds over low heat in the sauce pan. Once coated I immediately put seeds on to parchment paper. Smeard them into a thin layer. Let them cool 1 minute. Once semi hardened I began pulling the candy off the paper, and breaking it up.

For a dust of the candy I placed them in a food processor. Taking a small mesh strainer, and seperated the large pieces from the dust. Now I had irregular shapes of candied fennel seeds. A dusting powder, and irregular pieces, could be used many ways, in different recipes.

The taste was exquisite. It tasted like homemade healthy licorice. Candied fennel seeds can be used on salads, in dressing, sauces, desserts, and drinks. Who knew something so simple could be so appetizing to the pallet. I can’t wait to try this candy in different recipes. To start though I put it on a salad.

Secret To Living Healthy

As humans we become what we eat, hear, see, and smell in our environments. Our daily auto-suggestion, shapes our thoughts into what we perceive life should be. Once you control and master what you absorb in life, it will change how you feel and think as a reaction of it.

The places you go, and people you associate with, motivate your growth, or make you stagnant in life. Have fun with the people you love. Play games, go to a movie, or just spend time with them. You can love your family, and friends even if they’re not supportive. Everyone has someone they love but can no longer hang out with. You can set designated time to spend with them, only see them at certain functions, or catch up online. However, some people you care about can not be supportive, but it can’t stop you from living healthy.

Be you regardless where you are, or who your with. If you can’t be yourself, then you shouldn’t be in places, or with certain people that are negative to your health mentally, or physically. Living healthy has compromises but not at your life’s expense. A balanced life of activities, socialization, fresh food nutrition, and sleep will make you live out your wildest dreams. Here are some steps to help anyone begin to live a healthy lifestyle.

Once you take accountability for what you want to do to change your life, decide what your doing it for. A focus on the reason you want to live healthy , will give you drive to accomplish your goal. You can do it to save money, or for your family, and even yourself. Motivation of fufillinng these aspirations will keep you disciplined consitantly, and committed to moving forward.

Write your reasons, goals, and plan down. Post them on your calendar, refrigerator, mirror, or post them. Writing your goals and affirmations is a confirmation of achievement, and a vision board. Eat the rainbow, there are so many colors, and flavors of healthy foods to choose from. If you can’t eat veggies and fruit, juice them. Juicing can be costly, unless you juice smart. Use water, coconut water, or milks, for your base liquid, when juicing your fruits and vegetables.

Tea can be made hot, or cold, and is a great form of additional counted daily water intake. Tea also is great for relaxing, rejuvenating, and focusing the body, and mind. Whether its moringa and rooibos for vitamins, tumeric and ginger for inflammation, matcha and black for concentration, or hibiscus and chamomile to relax; drinking tea can give you what you need. Plus you can use fresh herbs, fruits and vegetables such as parsley, ginger, tumeric, pineapple, or radish to make your own tea.

Sugar is something to watch moderation for. My motto is if it’s not brown it doesn’t go down. Breads, should be whole grain, plus sugar should be raw, and not bleached.

Honey, or agave, is great sugar substitute, and there are variety of different grain breads. At home I follow this guideline. However, certain occasions like dinner dates, birthday parties, or co workers bringing treats to work I make acceptions. However, these acceptions are single portions, that way there is no error for binge eating into excusing self sabotage.

Eating properly is great especially accompanied by healthy activities. Healthy activities will also make you thirsty to drink more water. Oh you don’t like water? Try infusing it with fruits and vegetables, or drink seltzer water. Playing sports, exercise, walking, fishing, and gardening, are good ways to stay active. I usually start my day drinking a bottle of water, then one more after lunch, and another during my workout. You can be up to 48 oz of water consumed before dinner time.

Tea, seltzer water, and foods like cucumber, or melons can all contribute to your water intake. Staying hydrated will help you not be cranky, or sluggish because your actually not giving your body proper hydration.

Recording these workout, eating, and activity accomplishments gives you pride in honoring yourself for how much you improve over time. Before you know it 30 days turn into 90, and in a few months you can see no other way to live. You will feel the benefits of this and want more of it. You will physically get stronger, giving your mind power to make you a new you. Oatmeal and a banana in the morning will began to feel like a vitamin. Fruit and nuts for a snack will give you energy, for the next part of your day. A salad and cup of tea any time of day, will make your body feel rejuvenated.

Once you start a new way of living all these things I have listed will become simple to do. Everyday will get easier. Your body will began to crave the health it is now used to. You will forget about your unhealthy past, because the memory of it’s enjoyment will turn unattractive to you. You will create new healthy rewards, like trying an international fruit you never had, ice tea at Starbucks, or homemade custard at the ice cream parlor. You will begin to go out and enjoy life. Meet new people in the healthy area of the grocery store you shop, and doing the new activities you take part in.

Fresh Pineapple Tea

All around my neighborhood pineapple is on sale this week. At the price pineapple is selling for you can’t resist indulging in this delectable, healthy, fruit. Pineapple is a good source of nutrition, and helps with inflammation, digestion, and many other ailments. When most people eat pineapple, they discard the skin, and crown, of the fruit after cutting it. These people are missing out on a great easy way to make use of all the benefits a pineapple has to offer.

The crown once cut off makes a good garnish, if your cutting up fruit for family to eat right away. Place it in the center of your plate of cut pineapple. The crown can also be planted in your garden to grow more pineapple.

The skin makes a great easy tea, sometimes referred to as pineapple water. You can drink pineapple tea hot, or cold.

After you cut your pineapple up take the core, and skins and place them into a 8 quart pot. Fill the pot with water.

Bring this to a boil. Then simmer for 45 minutes. While simmering add honey, or sugar to sweeten. Ginger, tumeric, vanilla, and cinnamon, can also be added for flavor if you like.

Once done cooking place in a pitcher to cool, or enjoy while it’s hot. Refrigerate left over tea. Enjoy.

First Time Cooking Black Rice

Since I was a child I’ve always loved rice. Growing up hot bread, potatoes, pasta, or rice were served with most meals. Now at a older age in life I want to live eating more healthy. I try to eat carbs in moderation daily. I also have eliminated bleached foods from my diet.

When I eat rice it’s usually brown rice. One day someone introduced me to black rice. Once I tasted the black rice I fell in love. The flavor is stonger than brown rice, plus it has a lot of nutrients. Looking at it I thought this can not be easy to make, but I’m going to give it a try.

I purchased a 2 pound bag and said I will give cooking my own black rice a try. It was as simple preparing it as brown rice is. Now that I know how to cook it, I can have it any time. I prepared it with blackened chicken, and avocado & tomato salad, it was a great combination. Black rice also goes well with fish. With so many varieties of rice available, why not eat the ones that are most healthy for you.
